Jalapeno poppers up in this!!!! They’re just one of those foods that holds a perfect combination of spicy and smooth all wrapped in a crispy shell. Kind of like if Enrique Iglesias were rolled in bread crumbs then deep fried. Wait….wut? I know my mouth is watering just thinking about it…and hopefully you just became self aware that your mouth is watering too. They go perfect with a crisp, refreshing beer which is why they are on most happy hour menus of course. These particular vegan jalapeno poppers would conveniently fit on a vegan happy hour menu…if one existed.
Taco Tuesday? More like Taco Bluesday if you’re a vegan at the local Mexican watering holes. First of all you miss out on the awesome taco Tuesday deals because there isn’t a veggie option, and second of all you have nothing to counteract the 4 margaritas you pounded down because happy hour prices were only good for another 45 minutes….although that could be a good thing depending on what your goal is for the night. Typically Mexican restaurants will have a vegetarian fajitas option or a gigantic vegetarian burrito (if you ask them to hold the cheese and sour cream) but those aren’t on the happy hour menu and I want the cute little tacos that easily fit in one hand while the other hand is free to maneuver my margarita glass, dammit!
It seems like nearly every happy hour I go to now a days has sweet potato fries on the menu. I honestly had never had them up until a couple of years ago when I stopped by a Yard House for some after work drinks. I got the sweet potato fries as an alternative to normal fries and it changed my life forever. How could I have been deprived of this for so long?!?! Was this the new food fad like chipotle peppers? I hoped not because I liked them, I liked them a lot. In fact, often times I get cravings and I NEED them.
Last week the wife-unit and I stopped into our friendly neighborhood Islands Restaurant to get some quick drinks and a snack prior to seeing Hot Tub Time Machine. We really weren’t sure going into the movie how good it was going to be so it made sense to have a drink or two just in case. Just so you know, its about a 2 or 3 drink movie for it to really be funny I think. For a snack we were limited to chips and salsa/guacamole and french fries so we went with the fries. There was another guy at the bar chowing down on some little sliders that looked amazing. I called him a ‘jerk’ in my head while I sipped on a mai tai and wished I had some vegan sliders to munch on.
When we originally set out to make this recipe it was going to just be the “Cheesy, Oozy Guacamole Bean Dip” from Alicia Sylvesterstallone…err…Silverstone’s book The Kind Diet,
so all credit to her. If you haven’t picked up her book you should, the recipes are amazing and always ensure that you have leftovers (unless you have a family of like 6 people).
This stuff would probably be pretty amazing as it is from the book but we added a few tweaks for some extra spiciness and had to get creative with the sour cream because we didn’t have any in the fridge. The results were great and actually got better after leaving it overnight in the fridge so that the flavors could mingle a bit.
