It seems like nearly every happy hour I go to now a days has sweet potato fries on the menu.  I honestly had never had them up until a couple of years ago when I stopped by a Yard House for some after work drinks.  I got the sweet potato fries as an alternative to normal fries and it changed my life forever.  How could I have been deprived of this for so long?!?!  Was this the new food fad like chipotle peppers?  I hoped not because I liked them, I liked them a lot.  In fact, often times I get cravings and I NEED them.

My first order of sweet potato fries had some sort of sweet syrup on top.   I would suddenly come to the realization half way through finishing a pile of them, that it was maple syrup.

…I exclaimed.  How can this side dish ever be beat?  The sweet salty flavor of the fries drizzled with maple syrup?  Come on dude….

Sweet Potato Fries

  • 2 sweet potatoes, peeled and cut into the shape of french fries
  • 1 tbsp of olive oil
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp ground black pepper (or to taste)
  • A sprinkling of cayenne pepper (optional but goes great to make them a little spicy and sweet)
  • Pure maple syrup

Pre-heat the oven to 400 degrees.  While the oven is heating, cut the sweet potatoes into french fry shaped pieces and place them in a large bowl.  Put the tbsp of olive oil into the bowl on top of the fries.  Add the salt, black pepper, and cayenne pepper if using to the bowl and mix everything so that the fries are lightly coated in the oil and the spices are mixed in.  Spread the fries out evenly onto a baking sheet and put in the over for 20 minutes.  Once 20 minutes is up, flip the fries over and bake for about another 15-20 minutes.  Keep an eye on them though as they can blacken if left in too long and then they suck (I would know because I’ve done it).  They should get a little crispy but will remain soft in the center.

Once done in the oven move the fries to a large plate and drizzle the pure maple syrup on top.  Don’t go overboard here, you still want to taste the sweet potatoes.  Just a very light back and forth…that’s what she said.  These are great to have baking in the oven while you prepare something else or have some drinks.
