I hope everybody had a good Memorial Day weekend filled with delicious food and plenty of adult beverages.  For those of you who had to work I’m sorry that your lack of planning caused you to miss all the vegan BBQs on Monday…amateurs.  For those of you living in countries that don’t observe Memorial Day as a holiday…better luck next year?..or something.  At least we all have one thing that can bring us together, and that’s delicious vegan food.  The picture above is an example of delicious vegan food, happy hour style.

Fried zuchini are superior to french fries.  There I said it!  When given the choice between the two why would you choose fries?!  That would be like choosing fried potatoes over fried zucchinis…its just silly.  Although I have to admit that french fries have a cool mascot…the Fry Guy from McDonalds.

And this guy came up on Google search for “zucchini”…wtf?!

….anyways, enjoy this vegan recipe for fried zucchini.

Fried Zucchini

  • 2 medium sized zucchinis cut into spears about 3 inches long and a half inch wide (leave the skin on)
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup vegan breadcrumbs
  • 3/4 cup water
  • 1 tbsp ground flax seeds combined with 3 tbsp water microwaved for 45-60 seconds (mimics an egg)
  • vegetable oil for frying

Heat the vegetable oil to 350 degrees.

Put the cup of water/flax mix in a bowl, the flour, salt and pepper into another bowl, and the vegan bread crumbs in a larger bowl or shallow dish.

Dip the zucchini spears into the water/flax mix, letting the excess run off, then dredge in the flour mixture and let dry for about 2 minutes.  Dip the zucchini spears into the water/flax mix once more then dredge in the breadcrumbs until the entire surface of the spears are covered.

Fry the zucchini spears in the vegetable oil until they are golden brown.  Make sure you don’t pull them out too early or the zucchini will not soften inside the breading like it should.

I recommend these with a vegan ranch style dip as the picture depicts.

  2. I typically make my own. For these I used…

    1/2 cup Veganaise (sp?)
    2 tbsp vegan cream cheese (tofutti)
    1/4 tsp dried parsley
    1/4 tsp dried dill weed
    1/4 tsp garlic powder
    1/4 tsp onion powder
    salt and pepper to taste

    Pretty good :D I added a tiny bit of Egg Replacer to the flax mix & water. They were pretty good as is, but I decided to make the last batch with spices in the flour/crumb mix and it was much better. A little cayenne & some garlic powder did wonders :D Thanks for the great recipe!

    I use the recipe that veganhappyhour makes and I use chipotle sauce or aoli sauce to dip in.
