Well, we finally moved into the new place and what better way to celebrate moving into a new home than whipping up some delicious happy hour inspired grinds? Honestly it seemed like we had been eating out or grabbing instant noodle type food for like 2 weeks because of our lack of refrigeration. And yeah, its not like these vegan potato skins are extra healthy or anything but they were delicious and they went great with a few cold beers.
I hope everybody had a good Memorial Day weekend filled with delicious food and plenty of adult beverages. For those of you who had to work I’m sorry that your lack of planning caused you to miss all the vegan BBQs on Monday…amateurs. For those of you living in countries that don’t observe Memorial Day as a holiday…better luck next year?..or something. At least we all have one thing that can bring us together, and that’s delicious vegan food. The picture above is an example of delicious vegan food, happy hour style.
This may just be the best vegan recipe that I’ve posted to date. Honestly, I’ve never seen this item on any happy hour menu. I’ve never seen it on any menu, period. I’ve never even had it before. I guess I’m just a vegan dude with a dream…and that dream tastes freakin’ good. This was an experimental recipe that has become in instant classic to me. Try this one. No seriously, stop talking about it and just do it already!
Okay so I know half of you are going really?! SALSA??!! Come on Vegan Happy Hour what is wrong with you? BRING US THE FRIED GOODNESS!!!!!! But hear me out…I needed salsa for the fried guacamole recipe that I will be posting shortly. I could have just picked something up off of the shelf at the store but instead I decided to make my favorite salsa recipe and share it on the interweb. Plus you almost always get this for free during happy hour at Mexican restaurants.
Fried sticks of vegan cheese here!!! Get them while they’re hot and melty and gooey!!! Finally these vegan mozzarella sticks came out the way I wished that they would have in the past. My previous attempts at making them were utter failures. I’m pretty sure it was mainly because I used a bad breading process. As I was making these though, I could tell they were gonna be glorious. What happy hour menu would be complete without breaded sticks of melty cheese?
