Whoa…time to catch up on some posts here. After the family visiting and the mad dash to paint the living room and dining room, I finally had some time to cook this week! I’ve been busy whipping up some delicious vegan happy hour food that I think is just going to tickle your fancy…or tickle your Elmo…or both, whatever. This vegan recipe for chipotle seitan & pineapple is a cool fusion of flavors that will tickle your taste buds.
Close your eyes and imagine being magically whisked away to…..Delaware…..wait no, I mean the Hawaiian Islands. That’s how you’ll probably feel after having this vegan kalua “pork” sandwich. And just think, you’re not actually eating a dead pig that was buried and then UNBURIED in order to get this delicious sandwich. Oh lucky you! I’ve never actually been to a Hawaiian themed happy hour on the mainland but there HAS to be one somewhere. When I find one I hope it has the same drink specials that I took advantage of when I was in Kona. HELLOOOOO $2 MAI-TAIS!!!!
Orange chicken is one of those dishes that is a staple of what I’ll call the Chin-erican menu. Is it Chinese food? Is it purely an American invention? Only the inventor of the orange sauce combined with fried bites over rice knows. This is easily the best vegan Chinese food I’ve ever had and its so freakin’ good when prepared using battered and fried seitan. Also, for some reason, Asian beers seem to taste ten-times better when combined with this dish. WTF mate?
One of the most classic happy hour items I see in bars that I miss after changing to a vegan diet are chicken strips and buffalo wings. I’m realizing now that it wasn’t so much the chicken part that I missed as it was the crispy fried outside drenched in your favorite BBQ sauce or hot wing sauce. The inside of the delicious little morsels could be just about any vegetable or vegan meat replacement. Its all about the crispy outside and a quality sauce.
