Whoa…time to catch up on some posts here.  After the family visiting and the mad dash to paint the living room and dining room, I finally had some time to cook this week!  I’ve been busy whipping up some delicious vegan happy hour food that I think is just going to tickle your fancy…or tickle your Elmo…or both, whatever.  This vegan recipe for chipotle seitan & pineapple is a cool fusion of flavors that will tickle your taste buds.

Taco Tuesday?  More like Taco Bluesday if you’re a vegan at the local Mexican watering holes.  First of all you miss out on the awesome taco Tuesday deals because there isn’t a veggie option, and second of all you have nothing to counteract the 4 margaritas you pounded down because happy hour prices were only good for another 45 minutes….although that could be a good thing depending on what your goal is for the night.  Typically Mexican restaurants will have a vegetarian fajitas option or a gigantic vegetarian burrito (if you ask them to hold the cheese and sour cream) but those aren’t on the happy hour menu and I want the cute little tacos that easily fit in one hand while the other hand is free to maneuver my margarita glass, dammit!
